Ingredients
4 6-8 ounce pieces Center Cut Salmon
2 tablespoons Weber’s Classic Barbecue Rub
(two packets)
4 tablespoons Weber’s Smokey Joe Hickory Barbecue Sauce (or your favorite sauce)
Olive Oil
Instructions
In a mixing bowl, combine Weber’s Classic Barbecue Rub and olive oil, mix until blended. Dredge each salmon filet through the Barbecue rub and oil mixture. Let fish sit for 15 minutes with spice rub.
Grill over Direct High heat to sear the fish until it does not stick to the grill. (About 1-2 minutes per side for searing). Move to Indirect to finish cooking to desired temperature. Total cooking time is 810 minutes, depending on preference from medium rare to well done.
Baste salmon with Weber’s Smokey Joe Hickory Barbecue Sauce (or your favorite bottled or home-made sauce) during the last 3 minutes of grilling.
